The locals have never tasted it. Here are some hidden specialties in the Yangtze River Delta | One-third of the world’s caviar is produced here
In the cultural and tourism publicity wars in various places, perhaps only Quzhou caviar has been put on the hot search list by "friendly forces".
In January, riding on the "Erbin" craze, Sichuan Ya'an advertised to netizens that Ya'an produced 12% of the world's caviar output, ranking second in the country.
So where is the number one? That's right, Quzhou, Zhejiang, accounts for nearly 70% of the country's total exports and one-third of the global caviar market supply.

More than ten years ago, Quzhou City fully relied on the high-quality cold water resources of Wuxi River to introduce a leading enterprise, Quzhou Sturgeon Aquatic Food Technology Development Co., Ltd., and built the largest sturgeon processing center in China in Shishi Township, Kecheng District.
However, Quzhou netizens have questioned it because many Quzhou people have never eaten caviar produced in their hometown.
In fact, it’s because Quzhou’s caviar is mainly exported.
As the representative of Chinese caviar, Quzhou Caviar has always followed the quality route and has strict control over the time, process and raw material quality of the production process.
The production of Quzhou caviar requires a total of 16 processes, including egg collection, egg washing, draining, grading, pickling, and canning, and it must be completed within a strict limit of 15 minutes. At the same time, the entire workshop needs to be maintained during the production process. Only in a low temperature environment can the quality of caviar be guaranteed.
After completing 16 processes, a box of caviar will be shipped to all over the world within 48 hours, and the stay in Quzhou will generally not exceed two days.
There is a sturgeon breeding base in Quzhou City covering an area of more than 700 acres. The caviar produced here must come from sexually mature sturgeons that have been cultured in a pollution-free environment for more than 6 years. Such eggs are the best in caviar. of top quality.
Before caviar is put into production, some mature sturgeons will be transported to the Qiandao Lake breeding base in the middle reaches of the Qiantang River, where cold water resources at a depth of about 40 meters are extracted and cultured for about a month to make them comparable in quality to wild caviar.
At present, the caviar produced by the company is mainly sold to overseas developed countries. Quzhou caviar is available in the United States, Japan, France, Germany, Russia and other countries and regions.
In 2022, my country's import volume of sturgeon caviar and substitutes will be 81.2 tons, while export volume will reach 4448.9 tons.
In 2011, Lufthansa, Germany’s largest airline, has been using “Kaluga” caviar from Quzhou. In 2022, Quzhou caviar was brought to Singapore Airlines’ first class cabin again.
However, in recent years, with the improvement of living standards, caviar has become more and more popular in China. Through e-commerce platforms, Zhejiang Quzhou Sturgeon Aquatic Food Technology Development Co., Ltd. at the source of the Qiantang River sold 14 tons of caviar in the domestic market last year.
Compared with imported caviar, the price of domestic caviar is also very advantageous. Data show that in terms of unit price, the average price of imported caviar is 12.9 yuan per gram, and the average price of domestic caviar is 8.5 yuan per gram.
I believe that in the future, more and more domestically produced caviar will enter the dining tables of Chinese people.
Caviar produced in Kecheng, Quzhou, appeared on the G20 state banquet table.
