However, the production process of this Yuping specialty food is very complex and exquisite.

At the age of 61, Yao Dunlie is a provincial-level intangible cultural heritage inheritor of the Dong family's techniques for making canned oil tea. He has been particularly fond of eating Dong family canned oil tea since childhood and has been learning Dong family canned oil tea making techniques since 1980.
Yao Dunlie added ingredients such as soybeans to bowls and cans of oil tea
On September 5th, at the Yuping Dong Township Cultural Park, Yao Dunlie brought a handmade ethnic specialty food jar oil tea for the "Colorful Ethnic Groups Have Colorful" online theme activity interview team. The spicy and delicious taste instantly opened everyone's taste buds.
Yao Dunlie said that when making canned oil tea, the three most important ingredients are gray alkali cake, local chicken, and old tea. Especially, local chicken and old tea are the most exquisite. It is necessary to use local chicken for more than 2 years, and old tea needs to undergo 5 years of fermentation to ensure the deliciousness of oil tea.
In Yao Dunlie's view, the most difficult step in making a good bowl of Camellia oleifera is the picking of tea leaves. "Tea must be made from wild tea grown on the slopes of our local area, harvested around June 6th every year. It cannot be too tender or too old," said Yao Dunlie. The soup made from this type of tea can only be black and shiny.
Yao Dunlie introduced that in order to retain the unique taste of Dong family canned oil tea, he has always insisted on picking wild tea. Although it is not easy to find tea, it has also made Dong Township oil tea popular among many tourists. When business was good, the cans of oil tea he made on site could sell two to three thousand bowls in a day in the scenic area.

"I want to let the guests who come to Yuping taste the delicious Dong family canned oil tea, and let everyone taste the rich and colorful culinary culture of Yuping in our Dong hometown through a bowl of oil tea," said Yao Dunlie.
It is understood that in order to inherit the production skills of Dong family canned oil tea, Yao Dunlie has trained more than 20 apprentices in the local area since 2008. He has led his apprentices to participate in cooking competitions in the province and surrounding counties and cities multiple times and won awards.
He said that now he mostly chooses to let go and let his disciples make jars of oil tea. He believes that his disciples will definitely allow visitors from all directions to taste authentic canned oil tea, and use the fragrant canned oil tea as a medium to experience the charm of Dong Township's intangible cultural heritage.
