Who will oversee the cafeteria?

The operation director of a group meal enterprise was indignant about the "rat head and duck neck" incident at Jiangxi Industrial Vocational and Technical College. He analyzed that the mouse could not have entered the school cafeteria while cooking, and it is highly likely that it had already existed in the previous chain, which is the central kitchen. "If there is a big problem in operation and management, both the central kitchen and the chef head are responsible.".
According to the joint investigation team's report, the foreign object suspected of being a "rat head" that Jiangxi Industrial Vocational College ate in the cafeteria, after multiple judgments, was not the previously reported "duck neck", but the head of a rodent like rodent. This report also determined that Jiangxi Industrial Vocational College was responsible for this incident, the involved enterprises were directly responsible, and the market supervision and management department was responsible for supervision.
The involved enterprise Jiangxi Zhongkuai Logistics Service Co., Ltd. was subsequently terminated, and the food business license of the involved cafeteria was also revoked. Before that, Jiangxi Zhongkuai had just won the bid for the Dragon Boat Festival consolation goods purchase project for students in two campuses of Jiangxi Industrial Vocational and Technical College, with a total turnover of 944.404 million yuan, including 21104 Jiaxing brand Zongzi, each 160g, 2.6 yuan; 10552 Salted duck egg of Huanzhu brand, 60g each, 2.45 yuan; 10552 Heshun brand Tea egg, 60g each, 1.3 yuan.
"Nowadays, the group meal industry is very cautious. The group meals in the cafeteria are all for students, and food safety is of utmost importance. At the very least, the meat preservation method is not correct, and the food supervision has not checked it properly. Generally, chefs or supervisors need to check and prepare goods frequently based on years of experience, with many details." The operation director of the above-mentioned group meal enterprise told a reporter from China Central Radio and Television. In the group meal enterprise he works for, "vegetables such as chili peppers and cauliflower can be stored for up to 12 hours, and if meat includes pickled meat, it can be stored for up to 24 hours, which is basically made on the same day."
Even so, it is still difficult to avoid a very small number of food safety issues. According to the report of the "New Group Meal" official account in 2019, the development of Zhongkuai Catering began in 1991, when Li Pingjin, the head of the General Affairs Department of Jiangxi Nonferrous Geological Exploration Bureau, decided to resign and go out for a break. He first contracted a service building in the surrounding smelters. According to Tianyancha information, Zhongkuai Catering has established companies in 26 provincial-level and directly administered municipalities across the country, with 160 enterprises controlled through equity and over 200 indirectly owned companies. Its commercial territory involves accommodation, catering, leasing, and business services industries. According to reports, the original shareholding ratio between Zhongkuai Group and its subsidiaries was 6:4. Li Pingjin and his brother Li Sixing proposed to transfer more shares to the subsidiaries, and the group only held 51% of the shares in the subsidiaries.
