After inquiring about medical history, the emergency on duty doctor suspected that it was caused by nitrite poisoning and immediately conducted a blood gas analysis to check for methemoglobin. The results showed that the index of a family of three had increased, with the daughter even reaching 24.5%. After symptomatic treatment such as gastric lavage and the special antidote methylene blue, Aunt Shi's family finally improved and was discharged.
Recently, the emergency room of the Linping campus of the Second Hospital of Zhejiang University received multiple patients who developed symptoms of nitrite poisoning after consuming pickled amaranth roots. The most severe patients had a high methemoglobin index of 51.9%, and had consciousness disorders and respiratory failure. They were admitted to the ICU.

Emergency department doctor Chen Jie stated that the poisoning of Uncle Feng this time was largely due to inadequate processing and preparation of the raw materials for this dish.
Foods like amaranth stems, which are moldy or pickled, contain high levels of nitrite during the production process. If consumed too early, it is easy to consume too much nitrite.
Nitrite is an oxidant that can oxidize normal low methemoglobin to high methemoglobin, losing its ability to transport oxygen and causing tissue hypoxia. Severe cases can lead to decreased blood pressure, pulmonary edema, shock, and even death due to respiratory and circulatory failure.
Can pickled vegetables be eaten or not?
How to eat? The doctor suggests this
1. Marinate thoroughly and try to marinate for more than 30 days. The nitrite in vegetables will be decomposed by bacteria, gradually decreasing or even disappearing.
2. In moderation, do not consume for a long time, occasionally satisfy cravings, take small amounts each time;
3. Water washing: Nitrite is soluble in water. Before steaming vegetables, washing with water can remove some of the nitrite.
Doctors remind that there is a certain incubation period after nitrite poisoning, and the onset of the disease is often sudden. Generally, the disease occurs 0.5-3 hours after consuming food containing nitrite.
